Several years ago I posted a recipe for making soy nuts. To be honest, it wasn’t that good. They were too hard, like little pebbles. Recently I tried toasting them in the microwave. They turned out crunchy! In a lot less time! And they’re not overly brown:
All I did was:
- Soak some raw soybeans overnight.
- Rinse them.
- Spread them still wet on a plate.
- Microwave on high for 1 minute, stir, another minute, stir, etc., for about 6 or 7 minutes.
I lost count of the minutes. I’m sorry. I’ll count next time. It probably varies depending on how much you make (this was about 1/3 cup raw).
