This was a very ambitious menu. I’ve worked in commercial kitchens. That is a lot of work.

Eating animals was definitely a thing.

Grapes were also a thing:

• Niagara grapes
• Delaware grapes
• Catawba grapes
• Concord grapes
• Malaga grapes
• Tokay grapes

I wonder what “National Sorbet” was.
