You can double or triple this recipe. This also works well with apricots.
I don’t use any thickener … to keep it simple and because I’m being a bit of a purist. But don’t let that stop you. Mine only keeps a few days in the fridge before it starts to break down and get thin, but it never lasts more than a few days anyway!
It looks delicious! Must try it and also with apricots!! which I dearly love. It’s hard to find really tasty apricots though, so often they’re absolutey tasteless–picked too soon no doubt. Thanks for this.

I buy apricots that are hard and that nobody wants. Then I slowly massage them into this gooey sweet apricoty sludge. It’s just amazing. I used to add water but found it’s best not to. I do have to add sugar, but it doesn’t take much. I usually sip some as it cooks to see how much it needs. I don’t like it too sweet.
